these look lovely, and I've nicked the recipe for nibblous.com (with attribution - hope that's ok). But 4 tablespoons of olive oil? That can't be right, surely?
There's no other fat - no butter or marge. So I think it might be right - a lot of US muffin recipes have oil for the fat content, as do cake mixes where you add water, oil and egg. It seems like a lot, but would be less than a half tablespoon per muffin.
